The Napa Cellars 2016 Sauvignon Blanc presents alluring aromas of lemon blossom, lychee, ripe pineapple, white peach, jasmine, sweet heirloom melon and honeyed sunflowers. Full and lively on the palate, flavors of white peach, sweet grass, fresh pineapple, hints of wildflower honey complement a crisp and bright acidity. The body has soft mineral and light viscous nectar up front, immediately followed by perfectly balanced acidity, then paradoxically, clean, and yet, round and lingering supple finish. Winemaker, Joe Shirley recommends pairing this Sauvignon Blanc with sea bass lightly drizzled with olive oil and sea salt or tomato and cucumber gazpacho topped with basil, dill and goat cheese.
To bring out the remarkable aromas and flavors that make this varietal so appealing, the majority of fruit for the Napa Cellars 2016 Sauvignon Blanc is hand-selected from several sub-appellations in the warmer regions of Napa Valley, such as St. Helena, Yountville and Calistoga. Napa Valley’s warm days and cool nights help to develop this Sauvignon Blanc’s beautiful and vibrant aromatics, as well as its balanced acidity.
The 2016 growing season offered superlative growing conditions, which resulted in an abundance of premium grapes. After the grapes arrive at the winery, they are immediately de-stemmed and sent to the press. A cool fermentation in 100% stainless steel tanks follows, to preserve the bright and crisp Sauvignon Blanc fruit characteristics.
