The grapes for our 2007 Cabernet Sauvignon were selected from our estate vineyards from various regions of the Napa Valley. With fruit coming from the Rutherford area of the Napa Valley as well as from Oakville, this wine created was a true expression of Napa Valley Cabernet Sauvignon.
After arrival at the winery the clusters were hand-sorted and sent to the destemmer. The grapes were then lightly pressed in a bladder press and sent to tank for a 14 day fermentation. Due to the intensity of the fruit, the wine was aged in new and one year old American oak to add sweet vanilla notes and enhance the tannin structure. The depth, intensity and structure of the winesuggests that it has the perfect aging potential making it reminiscent of “classic-style” Napa Valley Cabernet Sauvignon.
The 2007 Napa Cellars Cabernet Sauvignon reveals vibrant aromas of blackberries and plumb that join with nicely integrated oak and vanilla on the palate. This full-bodied Napa Valley Cabernet Sauvignon cries for beef, lamb and game. Enjoy this “classic style” Napa Cab with a traditional Bistecca di Fiorentina (pan-seared sirloin with sea salt and lemon). Enjoy.
