This wine is classic Napa Valley Merlot with a deep ruby-red color, aromas of red cherry and dark chocolate with hints of black tea, green olive and cinnamon-vanilla spice join the supple tannins on the palate. This wine is great on its own, butif you really want something sublime, try pairing it with Tea-smoked Asian 10-spice Duck with a redcurrant infused demi-glace reduction.
The Napa Cellars Merlot hails from a blend of vineyards from Napa to Calistoga. Low yielding vines in the cooler mesoclimates of the Napa Valley helped produce small berries with impressive intensity. The selection of fruit from prime Napa Valley vineyards yielded a wine reflective of a classic Napa Valley Merlot.
During the winemaking process grapes from different vineyard lots were crushed and fermented separately to isolate distinct characteristics of each location. Racking and stabilization followed at which point the wine was moved to a blend of new and one year old American Oak barrels. After approximately a year of oak aging, the various lots were tasted and a final blend was created. This final blend was put back into barrels and aged an additional six months before going to bottle.
