The fruit for our 2008 vintage of Sauvignon Blanc is blended from vineyards located in Calistoga, St. Helena and Rutherford. 2008 was a cooler vintage in the Napa Valley, with a mild, extended growing season void of any dramatic heat spikes. These weather conditions helped develop Sauvignon Blanc with balanced acidity, beautiful aromatics and a complex mixture of spice and earth more reminiscent of classic interpretations of the varietal from maritime climates in Europe and New Zealand.
After the grapes arrived at the winery they were immediately destemmed, and sent to the bladder press. A cooler than typical fermentation followed, helping to enhance tropical and citrus fruit characteristics. Secondary fermentation was inhibited to retain the bright acidity and zesty mouth feel of the Sauvignon Blanc. The wine was aged at cool temperatures in stainless steel tanks for approximately six months. It was then sent to bottle to develop additional complexity before release.
Napa Cellars 2008 Sauvignon Blanc is ripe with the aromas of guava, banana and lime, layered with the fragrance of orange blossom. The palate is pure and clean with hints of minerality and pepper. This classic Sauvignon Blanc is a perfect companion to Herbed Chicken Breast tossed with Penne Pasta, Zucchini, Ricotta and Basil.
