The 2014 Napa Cellars Napa Valley Merlot boasts aromas of dark plum, mulberry, graphite, with toasted notes and hint of lavender. Flavors of bright red berries, toast, cafe con leche and chervil on the palate. This wine showcases fine grain tannins in palate with a drying finish. For a decadent meal, pair the 2014 Napa Cellars Napa Valley Merlot with roasted duck or honey-barbequed chicken with a side of ricotta risotto.
Grapes for the 2014 Napa Cellars Merlot are sourced from vineyards mainly from Oak Knoll region (88%), along with small portions from Carneros, Napa Valley and Rutherford — regions ideal for cultivating Merlot grapes. The moderate to cool climate in Napa Valley supports an extended growing season, resulting in elegant, intricate, complex and balanced wine.
Once harvested, the grapes undergo a 10- to 14-day maceration period and are fermented using the Délestage method. This process allows the winemaker to extract copious amounts of color and flavor from the skins, while avoiding excessive extraction of bitter and astringent flavors. After the fermentation process is complete, the wine is aged for 24 months in 100% French Oak barrels.
