Napa Cellars Dyer Syrah 2015
100% French oak, 41% new oak, for 23 months
The Napa Cellars 2015 Dyer Syrah showcases a deep purple hue in the glass. Vivacious aromas of Italian plum, dark berries, black cherry and tosted oak on the nose are followed by subtle hints of white pepper. Flavors of rich blueberry, graphite, earthy notes and hints of violets and tobacco coat the palate. This ripe, concentrated wine holds a great presence, dense mouthfeel and excellent length.
Dyer Vineyard is situated on a sunny, northwest hillside of Carneros in the southern part of Napa Valley, where the climate is relatively cool and the fruit ripens slowly and evenly. The soil is composed of clay loam, the slopes provide great drainage, and the vines receive minimal irrigation—ideal conditions for the Napa Cellars 2015 Dyer Syrah.
The grapes for the 2015 Dyer Syrah were handpicked and crushed immediately. The must was cold soaked for 24 hours prior to fermentation on the skins. Once pressed, an 11 day maceration period helped to eliminate excessive tannin extraction from the seeds. The saignée method of bleeding off some of the pressed juice imparts vivid intensity in the remaining wine. This Syrah was aged exclusively in French oak—41 percent of which was new—for 23 months.
