The Napa Cellars 2013 Pinot Noir is an elegant wine that delivers beautiful, fruitful aromas of dark cherries, cranberries and strawberry preserves with subtle tobacco notes. Abundant flavors of amarena cherries, rhubarb pie, and hints of cola rest on the palate followed by light toasted oak notes that carry through to the finish. This wine portrays excellent mouthfeel with soft and supple tannins and firm acid structure complete with a balanced finish. For a decadent meal, pair with oven-baked salmon filets and sautéed mushrooms complemented by dark ganache truffles for dessert.
Grapes for the Napa Cellars 2013 Pinot Noir are sourced exclusively from prime vineyards in South Napa Valley, where the vines are situated in a cool region close to San Pablo Bay. The maritime influences of morning fog and the cool breeze are ideal for growing Pinot Noir. The vines in this region produce fruit with layers of complexity resulting in wines with earthy minerality and exceptional natural acidity.
Once harvested, the fruit is carefully sorted, de-stemmed and gently crushed. To enhance color and flavor, extensive seed removal occurs and delestage procedures are incorporated during the six to nine day maceration period. This process helps to release the aromatic characters to create full, round tannins. After fermentation, the wine is aged in 100% French Oak Barrels for nine months.
