Tasting Notes
The Napa Cellars 2016 Reserve Collection Cabernet Sauvignon boasts bright aromas of
brambly berries, black currant, violets, earthy notes, hints of roasted coffee and brown
sugar. This wine has a firm palate and is approachable and well-structured with fine
tannins. For the perfect pairing, serve with beef stew topped with thyme or, for dessert,
Brie cheese drizzled with honeycomb.
Vineyard Notes
The grapes for the 2016 Reserve Collection Cabernet Sauvignon come mostly from
the Saint Helena appellation. Vineyards here offer level sites with deep, loamy soils,
good sun exposure and excellent air circulation—the ideal location for producing
classic Napa Valley Cabernet. The rest of the blend comes from carefully selected
vineyards in the Oak Knoll region providing warm dark fruit characters and attractive
tannin structure.
Production
After harvesting the grapes in the early morning hours, grapes underwent a 14 to 16
day maceration period and were fermented using the Délestage method. This process
allows the winemaker to extract copious amounts of color and flavor from the skins,
while avoiding excessive extraction of bitter and astringent flavors. The lots were then
aged in 100% French oak (42% new) for 26 months.
